Easy Peasy Lemon Squeezy

I stumbled across this recipe last night and just couldn't resist making it after dinner. 

So simple, so delicious. 

1 box lemon cake mix. 
1 8 ounce tub of cool whip
1 egg
lemon juice (to taste if you really love the lemon taste)
powdered sugar 

Mix up the lemon cake mix, cool whip, and egg by hand. I emphasize this point just because I learned that one the hard way - lots of lost lemony goodness landed on my floor. 

Roll the thick dough into balls and drop each ball into the powdered sugar to coat. Bake 10-12 minutes in an oven preheated to 350*

The biggest challenge will be to keep "helpful" Joes out of the batter long enough to actually bake any cookies. Taste testing is always appreciated, but so are a few actually baked cookies. Second challenge will be to not devour them all before bedtime (or at least before snapping a few pretty pictures).
